MAIN BANQUET 6-18-15
Southwestern chopped salad, with romaine, tomatoes, olives, corn, chilies, cheddar and jack cheese and a creamy chipotle vinaigrette
Mediterranean pasta salad, with rotini pasta, a blend of olives, dried tomatoes, basil, artichokes and mozzarella tossed in citrus-herb dressing
Greek spice St. Louis style ribs, slow cooked then finished on the grill with a sweet and spicy tomato-balsamic glaze
Smoked chicken riggies, with smoked chicken, prosciutto, peppers, onions, and olives tossed in a tomato cream and baked with rigatoni pasta and provolone
“Three Sister’s” sauté, with staple of the area; corn, squash and beans sautéed with garlic and onions and a Chimayo chili butter
Red bliss potatoes, new potatoes steamed and sliced and tossed in butter, Parmesan, sour cream and green onions
Apple Strudel, granny smith apples simmered with sugar and spices and baked in a flaky pastry with a cinnamon streusel and whipped cream

In the Campground area
Lasagna bites, homemade lasagna battered and deep fried in bite sized portions and served with a marinara and alfredo swirl
Shrimp fra diavolo, Mexican white shrimp skewered, marinated and grilled and served in a bacon-chipotle cream cheese sauce
Artichoke dip, artichokes, spinach, tomatoes and shaved onion blended with a lemon-cream and blended cheese, broiled and served with olive oil crostini
Albondigas (Mexican meatballs) fresh baked meatballs simmered in a zesty tomato and chili cream
Domestic and International cheese board, cheeses including; smoked Gouda, brie, cheddar, Swiss and Gorgonzola garnished with fresh berries and served with assorted crackers and breads
Tiramisu spoons, homemade tiramisu scooped into bite sized spoons and drizzled with dark chocolate and dusted with sea salt
